Since I find everyone fascinating, I have begun a compilation of interviews with anyone in the food industry who will give me 15 minutes of their time. I have now become a stalker with a recording device.

The recipes are all inspired by my lucky interviewee and cover a whole mĂ©lange of tastes. They’re still for one serving— continuing with the theme of my cookbook, and still using no— or very little equipment for each.

The first food photographs I had originally taken for my Best Braised Lamb Shank were said to have looked like a heart Hannibal Lechter had plucked out from someone. I thought they looked quite nice. So now, all food photography is shot by my generous and dear friend, Lorraine Goddard (www.lorraingoddard.com)— a brilliant talent and ridiculously down-to-earth, right down to her work: natural lighting and no retouching (if she takes the day off, I’m fucked).
